It’s pretty hard to not fall in love with this combination of spicy sausages and melted cheese. It is definitely rich, though, so the mustard (in the bread crumbs) saves the day with its zippy flavors. (Note: Sometimes it’s easier to find the combo cheese Colby-Jack than it is to find plain Colby. If that’s the case where you live, then simply eliminate the Monterey Jack called for in this recipe and substitute the Colby-Jack for both cheeses.)
